Pumpkin Protein Waffles Recipe

 

These pumpkin protein waffles are the perfect combination of winter season flavors with a protein boost to start your day off right. The taste of pumpkin with a hint of warm spices makes these waffles ideal for a healthy breakfast or as a snack.

Ingredients

  • 1/2 cup pumpkin puree (unsweetened, canned or homemade)
  • 1/2 cup oat flour
  • 1/4 cup protein powder (PowerFood Vanilla)
  • 2 eggs
  • 1/4 cup almond milk (or milk of your choice)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: a splash of honey or maple syrup for extra sweetness

Instructions

  1. Mix the dry ingredients: In a large bowl, mix the oat flour, protein powder, baking powder, cinnamon, ginger, nutmeg, and salt.
  2. Add the wet ingredients: Add the pumpkin puree, eggs, almond milk, and vanilla extract to the dry ingredients. Mix well until a smooth batter forms. The batter should be somewhat thick but still pourable. Add some extra almond milk if necessary.
  3. Heat the waffle iron: Add a bit of oil or cooking spray.
  4. Bake the waffles: Scoop about 1/4 cup of batter into the waffle iron at a time. Bake them briefly per side, or until golden brown. Flip carefully.
  5. Serve: Serve the waffles warm with your favorite toppings, such as banana slices, Greek yogurt, nut butter, nuts, or a drizzle of maple syrup.
