Ingredients
- 1/2 cup pumpkin puree (unsweetened, canned or homemade)
- 1/2 cup oat flour
- 1/4 cup protein powder (PowerFood Vanilla)
- 2 eggs
- 1/4 cup almond milk (or milk of your choice)
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: a splash of honey or maple syrup for extra sweetness
Instructions
- Mix the dry ingredients: In a large bowl, mix the oat flour, protein powder, baking powder, cinnamon, ginger, nutmeg, and salt.
- Add the wet ingredients: Add the pumpkin puree, eggs, almond milk, and vanilla extract to the dry ingredients. Mix well until a smooth batter forms. The batter should be somewhat thick but still pourable. Add some extra almond milk if necessary.
- Heat the waffle iron: Add a bit of oil or cooking spray.
